Applewood, Hickory, and Maple are my favourite woods to use for smoking...But, like Max, it depends on the meat I'm cooking...Or type of jerky I'm making.

I like apple for pork, but I prefer to use red oak for beef, or if I can get oak from used wine casks, that is my secret ingredient!
