What's your favorite? What's the hottest stuff you've ever had (or know of)? What's the best food to put it on?

I'd say my favorite hot sauce is Siriachi. Not the most original, but it's not half bad. The hottest stuff I know of (never had it though) is called Sudden Death. http://www.hotsauceworld.com/blairsuddeat.html

They must have made a mint. I live in the San Fernado valley (L.A. native) and everyone who moves away always bitch to me about the lack of good Mexican food, that, and not having Bob's Big Boy restaurants.

The best Mexican I've had is in restaurants in poor areas where they live. Everything is dirt cheap and you quickly learn what goat is in Spanish.

Goat is the bomb. I like the freaky meats, tripas, cabeza, lengua. If you don't tell people what the meat is, they think it's the best tacos they ever had.

My favourite hot sauce is actually a recipe made by my mother.

It is a combination of ketchup, yellow Surinam peppers, garlic and Surinam spices.

Instead of ketchup she sometimes uses soy sauce.

My favorite go to sause is Jimmy Os .. Texas tres chiles hot sause......   what I love about this sause is the heat level is just right...... clears your sinus and your eyes just begin to water...and on top of that it adds flavor.... not just heat to anything you add to it... and its made right here in
San Antonio ...... 

Most chili sauce contains the preservative sodium benzoate. It's usually there even if not listed on the ingredients. Sodium benzoate is associated with destruction of cellular mitochondria. It kills us, slowly, the same way it kills the bacteria. Watch out; sodas and most other bottled sauces and dressings have it too. Look for "all natural" products that don't have it, refrigerate after opening, and use it up promptly. Sodium benzoate causes, basically, premature aging.

Trader Joe's chili sauces don't have it, so I stick to those. I buy the middle-hot one, made from ripe Jalepeños. There is one grade hotter, made from habañeros, but I figure the middle grade is hot enough, and we could always just add more. However we do use a lot of it. Maybe I should buy one bottle each, so that those who use a lot could just use a little of the habañero sauce.

I love me some Texas Pete's.

I like hotsauce but I like my hotsauce to have some flavor and not just be straight heat. My fav hotsauce is El Yucateco habanero hotsauce. Really hot but also has a great flavor to it. My gf is Mexican and its hard to get her family to say something is hot but they all say this is hot. This sauce seems to be a hit with everyone. It's very cheap too like under $2. I picked some up in Mexico, meant to keep the bottle to reorder and threw out it. Was wakling through Cermaks grocery store recently and saw it so picked up a few bottles. I believe you can also order it online.
